Had the Viet fried rice, it's the best bang for your buck. It comes with shrimp, sausage, and beef plus a mixture or vegetables.
They do serve tofu here too.
Spring rolls are on point and plenty of options -

This place has a really good selection of foods. I didn't give this a complete 5 bc the curries/soups are extremely oily. I have never sat down to eat but every time I order takeout it's the same. My body doesn't handle oily foods very well so I end up saving it or throwing it out, depending on how my body reacts. I did order a separate bowl of broth once and when that got cold you could see the oils on top.
I've tried other pho places but they all deliver the same extra oily foods.
I just like ordering here because it's close to my home and their spring rolls are my favorite. -

On the way to the El Paso airport, the three of us stopped at the Pho Tre Bien Express for lunch. Our friend had the tofu pho, my wife had the chicken pho and I had the lemongrass noodles with beef. All of the selections were good. However, my wife and I have had similar meals that were better. Service was good.

Food is really good and service is as expected. I would have given them a 4 star rating but I just saw the guy cleaning the tables taking the unused leftover bean sprouts and cilantro back into the kitchen. What else do they reuse? Leftover soup? This is completely unacceptable and disgusting. I will be reporting them to health services.
Edit: the guy just gave it to my wife with the used lime in there!! Fn nasty!!
